Measuring tips
USDA lists bread flour at 137 g per cup, a bit more than its 125 g for all-purpose; other sources such as King Arthur Baking use 120 g for both, so if a recipe was written by weight, follow the grams. Bread flour has more protein and absorbs more water, which is why pizza and bread doughs made with it can take a higher hydration.
These weights follow USDA (137 g per cup). If you spoon the flour into the cup and level it, a cup holds about 120 g — use 120 g per cup instead, or better, weigh it.
Other charts disagree a little: King Arthur Baking uses 120 g per cup of bread flour, against USDA’s 137 g. Neither is wrong — it depends on how the cup is filled — but if a recipe gives grams, weigh.
