UK recipes usually drop 20 °C for fan ovens. US convection ovens drop 25 °F (about 14 °C), and many do it automatically — check your manual so you don’t reduce twice. Oven dials are rarely exact; an oven thermometer is the cheapest upgrade most kitchens can make.
