Measuring tips

Granulated sugar measures very evenly by volume — USDA puts a cup at 200 g. The grains are hard and don’t pack down, so a scooped cup and a spooned cup come out almost the same.

Fill the cup and level the top with a knife.

Other charts disagree a little: King Arthur Baking uses 198 g per cup of sugar, against USDA’s 200 g. Neither is wrong — it depends on how the cup is filled — but if a recipe gives grams, weigh.
